DAL AMRITSARI

INGREDIENTS

1.            Whole Urad Dal – 1 cup

2.            Chana Dal – ¼ cup

3.            Salt to taste

4.            Ginger – 1 tsp

5.            Garlic – 1 tsp

6.            Turmeric powder – ½ tsp

7.            For the tempering

8.            Ghee – 4 tbsp

9.            Cinnamon – 1 inch stick

10.          Cumin seeds – 1 tsp

11.          Ginger – 1 tsp

12.          Garlic – 1 tsp

13.          Onion – ½ cup ( Chopped )

14.          Green chilies – 2-3 ( Slit into halves )

15.          Tomato – 1 cup ( Chopped )

16.          Red chilli powder – 1 tsp

17.          Dry mango powder – 1 tsp

18.          Coriander powder – 1 tsp

19.          Cumin powder – 1 tsp

20.          Garam masala powder – 1 tsp

21.          Fresh coriander for garnishing

INSTRUCTIONS

1.            Wash the Urad dal and chana dal and add it in a pressure cooker along with 4 cups of water, salt, ginger, garlic and turmeric powder and pressure cook till dal is done. (Approx one whistle on high heat and 3-4 whistles on low heat)

2.            Remove the cooker from heat and let the pressure release.

3.            Mash the dal using the back of the ladle.

4.            Heat ghee in a pan.

5.            Add cinnamon and cumin seeds and let them crackle for a few seconds.

6.            Add ginger, garlic and onion and fry until onions are slightly browned.

7.            Add green chilies and tomato and fry for 2-3 minutes.

8.            Add little water if required.

9.            Add red chilli powder, dry mango powder, coriander powder, cumin powder and garam masala powder and fry for a few seconds.

10.          Add the tempering in the dal and mix well.

11.          Garnish with fresh coriander.

12.          Serve hot with laccha paratha or Naan.
